Characterisation of restrictions and conditions for preservation
In order to prevent perishable foods from spoiling, we must understand the restrictions relating to their biological, physical and chemical characteristics so that we can create a favourable environment for their preservation.
Some conditions that must be evaluated for proper preservation:
1) Biological and chemical: contamination, humidity, ventilation, lighting, time/temperature, sanitary requirements, etc;
2) Physical: packaging/unitisation, storage, stacking, handling (transhipment), time, vibration, impact, etc;
Time is usually an aggravating factor for preservation conditions;
The situation is usually more critical when the food depends on low temperatures for its preservation, in which case all the stages of the so-called "cold chain" must be strictly controlled because any change in product quality is cumulative and cannot be recovered.
For a correct logistical process for the distribution of perishable foodstuffs, all of the above conditions must be assessed for each of the stages up to delivery to the ship, where they need to last longer and be of the highest quality without the addition of chemical products, as our products are packaged naturally.

Emporium Maritime Ship Supply's logistics centre has an adequate storage volume for all our products, especially for food that is delivered on demand. Our storage is a maximum of 48 hours at room temperature, such as vegetables in general, all processed and vacuum-packed 24 hours before delivery.
